Cooking with Liquid Nitrogen

Liquid nitrogen can be a useful (if somewhat dangerous) tool in the kitchen. WHat follows is an article and accompanying recipe. From personal experience I can say the liquid nitrogen is not difficult to handle if you take a small number of simple precautions.
